So sorry not to have replied prior to this; I'm always assuming that  someone 
brighter or with more experience is available to reply to your request  for 
information.  If that's not the case and you still need more info than  the use 
of a pressure cooker...for canning/bottleing...Try to get your  hands on this 
book
Keeping the Harvest By Nancy Chioffi & Gretchen Mead.  "A  Down to Earth 
Book' -Storey Publishing
Storey Communications, INC  Pownal, Vermont 05261  Surely  Amazon.com or any 
other book store on line could find this for you.  Very  down to earth 
information with specific instructions for canning and  freezing.  The original 
publication was in 1942, however it's been revised  and update with "USDA 
Guidelines" in 1994.  
    I've been putting up our own vegetables now  for thirty years, 
(forty-five if you count the lessons from my  Grandma)...Grandma used a pressure cooker 
for many things, but never  canning!  I prefer the freezing methods, much less 
labor.  However if  power and or freezer space are not available, this book 
has great information on  canning.  Great care needs to be taken and 
instructions need to be followed  closely when canning, so you don't get food poisoning. 
 Use the freezer  methods whenever possible.  Best of Luck
