[Community_garden] a final woid on Safe home canning procedures

Great stuff (I especially like "Mr. Sustainable"'s writings; he's 
good!)--and all rife with dire warnings about the dangers of not pressure 
cooking veggies.
    I know that some people on this list have said they've been water 
canning low-acid foods for years, but these and other sources make it sound 
as reasonable to me as driving drunk or repairing a light socket without 
turning the power off. Just because you didn't crash or get electrocuted 
doesn't make it a good idea.
    Remember--the people who HAVE paid the ultimate price for taking those 
risks are no longer around to post warnings not to do what they did...
